In 2015, Scanfisk Seafood considered the need of offering a product with the same quality but through a process which needed to be as natural as possible.
Right now, only frozen seafood can reach remote locations. The goal of this project is for fresh seafood to arrive to a wider public and in better organoleptic conditions.
This way, we are indirectly contributing to decreasing the productive pressure on fisheries and their overexploitation.
ULTRAFISH, has as its main goal, to integrate in our process a way of elaborating seafood (frozen and rehydrated) with ultrasounds and ultraviolet technologies.
Ultrasound technology has never been previously used on the seafood industry, and its implementation optimizes water usage throught the whole process. Plus, by remarkably reducing the timing of the different productive phases, this technology is also translated into a reduction of energetic consumption.
These ultrasaounds work together with ultraviolet (UV) lights. The combination of both manages to reduce the total water waste by a 50%.
After the definite implantation of the ULTRAFISH project at Scanfisk, we will manage a 5-day increase on the product shelf life, eliminating in our future processes any use of chemical additives used on the industry.
